I’m always looking for easy dinner recipes because it always seems like we are go go go, super busy during the week. I don’t want to waste my evening in the kitchen instead of hanging with my kids.
And one ingredient that I always seem to have hanging around is chicken. There are so many ways to cook it that you can pretty much bet that at least on of my dinner recipes every week will include that as the main ingredient.
And this easy tomato chicken recipe is a great example of how to use chicken! I love the flavor with the tomato sauce that the chicken gets broiled in. And of course the melty cheese on top is a nice addition.
You can put this chicken recipe over pasta or even rice. Or just gobble it up on its own! Enjoy!
Tomato and Mozzarella Chicken
- 4 chicken breasts
- 1 TBSP olive oil
- 1 TBSP minced garlic
- 1 14 oz can crushed tomatoes
- 1/2 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- 1/4 tsp dried basil
- 1/2 cup onions
- 1 TSP sun dried tomato paste
- salt and pepper
- 1/4 cup water
- 4 slices mozzarella cheese
Sprinkle the chicken with a pinch of salt and pepper on both sides. Heat olive oil on medium heat in large skillet. Add the chicken and cook for about 3-5 minutes per side until chicken is cooked through. Set aside on a plate.
Preheat broiler setting on oven.
Add the onions to the oil remaining in the pan, or add 1/2 tsp if there isn't enough. Saute for 2-3 minutes until tender. Add the garlic and cook for another 30 seconds.
Add the crushed tomatoes, Italian seasoning, red pepper flakes, dried basil and pesto and stir to combine. When the sauce reaches a simmer add a 1/4 cup of water, lower the heat, cover and let simmer for 10 minutes or until the sauce thickens. Season with salt and pepper to taste.
Place some sauce at the bottom of a baking dish. Add the chicken breasts on top and pour the rest of the sauce on top of the chicken. Add a slice of cheese to the top of each breast. Place chicken under broiler for 1-2 minutes until cheese is bubbly. Serve over pasta if you like.
