This recipe could not get any easier. Truly. An actual dump it and forget it crock-pot recipe. Not one of those recipes that promises a quick and easy meal so you buy all the ingredients and it turns out there’s a half hour of prep involved.

This is a simple mix, dump, set it and forget it recipe. And the chicken comes out very tender with a smoky and spicy kick to it. If you don’t like a little heat, this is not the one for you. It’s not SUPER spicy, but there are adobo peppers in the sauce so it’s going to pack a little punch.

And I have to remind you about my FAVORITE crock pot secret: Using slow cooker liners! These things are a lifesaver! Just put this bag in the bottom of the crock pot and you’ll have zero cleanup after you are finished. I wish I had known about these before because I could have saved so much time from me scrubbing the bottom of my crock pot.

Easy Honey Chipotle Chicken Tacos in the Crock Pot
  1. 1.5 lbs Chicken thighs
  2. 1/4 cup peppers in Adobo sauce
  3. 1 8oz can tomato sauce
  4. 1/4 cup honey
  5. Tortillas
  6. And any taco toppings you want like lettuce, cheese, avocado, sour cream.
  1. Combine all the liquid ingredients together in the crockpot (peppers and sauce, tomato sauce, honey). Add the chicken on top. Cover and cook on low for 8 hours or high for 4 hours.
  2. Once cooked, shred chicken and mix with sauce in crock pot then serve on tortillas, add your toppings.

That’s it! so easy, right? Is it the most sophisticated recipe? Nope. But hey, this recipe requires zero prep so I’m not complaining.
