This recipe could not get any easier. Truly. An actual dump it and forget it crock-pot recipe. Not one of those recipes that promises a quick and easy meal so you buy all the ingredients and it turns out there’s a half hour of prep involved.
This is a simple mix, dump, set it and forget it recipe. And the chicken comes out very tender with a smoky and spicy kick to it. If you don’t like a little heat, this is not the one for you. It’s not SUPER spicy, but there are adobo peppers in the sauce so it’s going to pack a little punch.
And I have to remind you about my FAVORITE crock pot secret: Using slow cooker liners! These things are a lifesaver! Just put this bag in the bottom of the crock pot and you’ll have zero cleanup after you are finished. I wish I had known about these before because I could have saved so much time from me scrubbing the bottom of my crock pot.
- 1.5 lbs Chicken thighs
- 1/4 cup peppers in Adobo sauce
- 1 8oz can tomato sauce
- 1/4 cup honey
- And any taco toppings you want like lettuce, cheese, avocado, sour cream.
- Combine all the liquid ingredients together in the crockpot (peppers and sauce, tomato sauce, honey). Add the chicken on top. Cover and cook on low for 8 hours or high for 4 hours.
- Once cooked, shred chicken and mix with sauce in crock pot then serve on tortillas, add your toppings.
