Kids and tator tots seem to go hand in hand. And listen, I get it. Tator tots somehow combine the perfect amount of fluffy potatoes with a crispy outside that is irresistible. But if you are sick of just throwing some on the side with ketchup then you will love this tator tot enchilada casserole recipe!
This is a slightly more adult acceptable dinner dish that still uses your kid’s favorite potato so hopefully everyone will be happy! It’s super easy to make with just a little prep time and then 20 minutes in the oven.
You can even get creative and throw some peppers in the ground beef mixture to change it up! And sneak in some of those pesky vegetables your kids won’t eat!
Tator Tot Enchilada Casserole
- 1 lb ground beef
- 2 cups chopped onion I go with frozen to save time and tears
- 2 TBSP minced garlic
- 2 tsp taco seasoning from packet
- 2 cups tater tots
- 1 can enchilada sauce
- 1 cup Mexican blend cheese
- salt and pepper
Preheat oven to 350 degrees.
Add beef to skillet and cook over medium heat until halfway browned. Add onions and garlic and continue cooking until beef is completely browned. Add taco seasoning and cook for another two minutes. Remove from heat and drain the grease. Pour the enchilada sauce into the beef and continue cooking for 2-3 minutes.
Transfer the mixture from the skillet in to a 9X13 baking dish. Scatter the tater tots on top. Sprinkle the cheese on top. Bake uncovered for 15-20 minutes or until tater tots are golden brown. Top with scallions. Enjoy!
