This easy chicken recipe is a fave of mine because it uses one of my favorite ingredients: pesto sauce. I LOVE pesto sauce. I like pasta with pesto, bread with pesto.
Basically, any recipe with pesto is going to be a winner for me. So of course this baked pesto chicken recipe is one of my favorites. Plus it’s so easy to prepare.
Just slice some tomatoes up, toss the chicken in a dish, cover with pesto/tomatoes/cheese and bake. That’s it! I like to serve this easy chicken recipe over rice, but you can try pasta too!
Baked Pesto Chicken
- 3-4 boneless skinless chicken breasts
- 6 TBSP prepared pesto sauce
- 1-2 Roma tomatoes
- 1 cup shredded mozzarella
Preheat oven to 400 degrees.
Lay chicken in single layer in glass baking dish.
Spread pesto sauce on each piece of chicken.
Place a sliced tomato (or two) on each chicken breast.
Sprinkle cheese over the top.
Bake for 30-40 minutes until the chicken is cooked through. Can serve over instant rice or pasta!
