This Pinterest voyage was a long and grueling one. Trying to find the best pancake mix had it’s fair share of Pinterest fails and frustrations. BUT I FINALLY FOUND IT.
The BEST pancake ever!
It’s easy to mix up, no equipment needed. The resulting pancake is a light, fluffy cake that has a great taste to it. Not too sweet, not too buttery. The ingredients are all staples of my pantry so even on a weekend that I haven’t gone grocery shopping I can usually whip these together. And this is a fun one to do with the kids (if you are in the mood for spilled flour and picking out egg shells).
Easy and delicious pancake recipe
- 2 cups flour
- 5 tsp baking powder
- 4 TBSP sugar
- 1 tsp salt
- 1/2 cup oil
- 2 cups milk
Preheat a griddle or large skillet over medium heat.
Combine dry ingredients in a medium bowl with a fork.
In another bowl, whisk eggs, oil, and milk together until well combined.
Add wet ingredients to dry ingredients, and mix with a fork until mostly combined, with some small lumps of flour remaining.
Then cook away! I’m not about to give tips on how to cook the pancakes because everyone’s griddle/pan heats differently. All I will say is when the batter starts to bubble I usually take a peak to see how they look.
