My kids, like most, hate vegetables. Not all vegetables, but the majority of them. Especially broccoli. And they have a knack for picking out all the good stuff even if it’s buried deep. But this broccoli alfredo tortellini recipe is one they will at least attempt to eat. Green stuff and all!
I always use the smallest broccoli florets I can find in hopes my kids won’t even notice them among the cheese and pasta. It doesn’t always work, but maybe if I keep trying they will eventually come around. Maybe.
This is a tasty pasta dish that is so easy to make. It’s fast and the prep time is minimal. This will be on your dinner table in less than 30 minutes. So if you are needing to pin something to your easy recipe board on Pinterest, this tortellini recipe is the one!
Broccoli Alfredo Tortellini
- 1 package broccoli florets steamers The frozen kind you throw in the microwave
- 1 (12oz) package refrigerated cheese tortellini
- 3 TBSP butter
- 2 TBSP minced garlic I use the pre-minced garlic that comes in a jar
- 1 cup chopped onion I use frozen to save time
- 1/4 tsp red pepper flakes
- 1 pinch nutmeg
- 2 cups half and half
- 1 cup grated parmesan cheese
- salt and pepper
Steam your broccoli in the microwave and cook tortellini according to package, setting aside 1/4 cup of cooking liquid just before draining pasta. Drain well.
While tortellini is cooking, melt butter in a large pan over medium heat. Add onion and cook for three minutes. Add garlic, red pepper flakes and nutmeg and cook for two more minutes.
Pour in half and half and bring to a simmer for 2-3 minutes.
Add Parmesan cheese and turn heat to low. Once cheese is melted add tortellini and broccoli plus cooking liquid. Stir to combine everything well and cook a few more minutes to thicken the sauce. Season to taste with salt and pepper.
