Shrimp Tacos with Pineapple Salsa

It's sizzling outside right now and when I come home from work I just don't feel like cooking anything too heavy. We grill out a lot, but that gets old after a while. So I was on the hunt for something light, fresh and easy. That's when I stumbled upon this amazing shrimp taco recipe

If you are looking for a light summer meal, this is it! It's really easy and is done in under 30 minutes. The pineapple salsa is the star of this meal for sure and my husband wanted to keep the extra salsa to use for his chips!

Servings 6 tacos

Ingredients

  • 1 lb shrimp I used frozen, easy to dethaw, but don't forget to cut the tails off
  • juice from one lime
  • 1/4 tsp salt
  • 1/4 tsp chili powder

Salsa ingredients

  • 1 cup chopped pineapple (I used canned version and drained it)
  • 1 small tomato (diced)
  • 1/2 cup finely chopped red onion
  • 1-2 tbsp green chiles
  • 1 tbsp apple cider vinegar

Instructions

  1. Make salsa by combining all salsa ingredients.

  2. Cut tails of shrimp and toss with lime juice, salt and chili powder. Grease a large skillet with with a nonstick cooking spray and heat over medium-high heat.

  3. Transfer shrimp to skillet and cook for about 1-2 minutes on each side and until pink. Do not overcook.

  4. Combine shrimp and salsa on tortillas and top with any other ingredients you like.

Chicken Enchilada Burrito Bowl

Fast Chicken Enchilada Burrito BowlYou know how you go to Chipotle and spend way too much money on a burrito bowl? Well, you can just make this chicken enchilada burrito bowl recipe instead and feed your entire family! This meal is kind of a mix between a burrito bowl and nachos and it’s super good. And if you want to really make it like a burrito bowl then cook up some rice to go on the bottom!

The chicken in this recipe has great flavor and the fresh pico de gallo is a perfect way to finish off the dish. Feel free to get creative with the ingredients and toppings you use. Anything goes!

Chicken Enchilada Burrito Bowl

Total Time 20 minutes

Ingredients

  • 1 8oz package cream cheese spread, softened
  • 1 packet taco seasoning mix
  • 2 TBSP milk
  • 1 lb boneless skinless chicken breasts, cut in bite sized pieces
  • 2 tsp oil
  • 1 15.5 oz can kidney beans, rinsed
  • 1 cup shredded lettuce
  • 1/2 cup pico de gallo
  • 1/2 cup shredded cheddar cheese
  • 1 bag tortilla chips
  • Instant rice If you want to add to bottom of meal

Instructions

  1. Mix cream cheese spread, 2 TBSP taco seasoning and milk until blended. It's fine if its a little chunky, it will melt in the skillet.

  2. Toss chicken with remaining taco seasoning.

  3. Heat oil in large skillet on medium heat. Add chicken, cook 6 to 7 min or until done, stirring frequently.

  4. Add beans and cream cheese mixture to skillet, cook and stir for 2 minutes or until heated through. Top with lettuce, pico, and shredded cheese. Serve with tortilla chips.

Meatball Casserole

Easy Meatball Casserole RecipeI love this meatball casserole recipe and my kids can’t get enough of it either. This is a nice change of pace from the other pasta casserole dishes because the meatballs give it a little something special. 

Plus it doesn’t get any easier than mixing everything together in a casserole dish and popping it in the oven! Play around with the pasta sauce you choose to use. Maybe even try an Alfredo sauce? I haven’t tried that yet but I bet it would be yummy!

Toss some pepperoni in? YES! Throw some spinach in to trick your kids in to eating vegetables? YES! You can do a ton with this super simple recipe! Just don’t forget to thaw your meatballs ahead of time.

Meatball Casserole

Total Time 45 minutes

Ingredients

  • 1 16 oz package uncooked rotini
  • 1 25 oz jar spaghetti sauce
  • 3 cups water
  • 2 cups shredded mozzarella cheese
  • 1 14oz package fully cooked miniature meatballs, THAWED

Instructions

  1. Preheat oven to 425 degrees.

  2. In a large baking dish stir together uncooked pasta, marinara sauce, water, and meatballs. Cover tightly with aluminum foil and bake for 35 minutes.

  3. Uncover, stir. Check to see that the pasta is almost finished cooking.

  4. Sprinkle mozzarella over the top and bake uncovered for 5-10 more minutes until cheese is melted and pasta is tender.

Smothered Pork Chops in the Crock Pot

Crock Pot Smothered Pork ChopsI’m not a big meat eater (which my husband can’t quite grasp come grilling season) but I will eat a good pork chop. And this crock pot pork chops recipe is perfect for me because the soups make a nice creamy sauce that I can smother my chops in.

Plus, this recipe could not get any easier. Just mix the soups up, add the chops to the crock pot, dump the soup over them and cook! It’s that simple. Before you take the pork chops out to serve, whip up some mashed potatoes (and by whip, I mean use instant mashed potatoes :). Serve the chops on the potatoes and dig in!

Crock Pot Smothered Pork Chops

Total Time 4 hours

Ingredients

  • 4 pork chops
  • 1 10.75 oz can condensed cream of mushroom soup
  • 1 10.75 oz can condensed cream of chicken soup
  • 1 packet Lipton onion soup mix
  • 1 7oz can mushrooms, drained, or use fresh
  • 3/4 cup water
  • salt and pepper
  • Instant mashed potatoes

Instructions

  1. Place pork chops in cooker and season with salt and pepper.

  2. In a large bowl mix both condensed soups, onion soup mix packet, mushrooms, and water. Mix well.

  3. Pour mixture over pork chops. Cook on high 4-5 hours or on low for 7 to 8 hours.

  4. Serve over instant mashed potatoes and throw the gravy on top!

Hot Italian Sandwich Recipe Ready in 20 Minutes!

Hot Italian Sandwich RecipeI love a good hot sandwich. Crispy bread, melty cheese, delicious toppings. mmmmm. But, I also love carbs, so….

This hot Italian sandwich recipe is quickly becoming one of my favorite go-to dinner options because of how easy it is to put together and throw in the oven. Just mix the yummy butter and seasoning spread together and assemble the sandwiches. Then throw in the oven for 10 minutes until the cheese is melty and good, and that’s it!

You can mix up the type of meat in the sandwiches too! And this recipe is an easy one to make work for large crowds. So save this to your party board!

Hot Italian Sandwiches

Total Time 20 minutes
Servings 6 sandwiches

Ingredients

  • 6 hoagie buns
  • 4 oz sliced salami
  • 4 oz sliced pepperoni (or just use the small pepperoni for pizzas
  • 9 oz sliced smoked ham
  • 24 slices mozzarella cheese
  • 1/2 stick butter softened, but not melted
  • 1 tsp dry Italian seasoning

Instructions

  1. Preheat oven to 350 degrees.

  2. Mix butter and Italian seasoning. Evenly spread butter on inside of hoagie rolls.

  3. Layer 2 slices of mozzarella, 2 slices salami, 2 slices pepperoni and 2 slices ham.


  4. Once sandwiches are assembled, place into a large baking dish. Make sure they are tightly pressed together sideways with the open side facing up.

  5. Bake for 10 minutes for a hot and melty sandwich.

Crock Pot Buffalo Chicken Sliders

Easy Chicken Sliders RecipeThis chicken sliders recipe is super simple and is great for big parties or a lazy Sunday meal. There’s certainly some heat with this version but the slaw you throw on top evens it out nicely. I’ve served this at Super Bowl parties and birthday parties and it always goes over really well with the crowd! 

You can also substitute blue cheese dressing instead of ranch if that’s your preference. And you can change up the type of roll you use as well! Sometimes I use King’s Hawaiian rolls, other times I go for something a bit more substantial. Either way, these are delicious!

Crock Pot Buffalo Chicken Sliders


Total Time 4 hours

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 12oz bottle Franks Hot Sauce
  • 2 stalks chopped celery
  • 1 chopped red onion I try to find them pre chopped to save time
  • 1/3 cup ranch dressing
  • 1 pkg 12 dinner rolls
  • salt and pepper

Instructions

  1. Set aside two tablespoons of the Frank's sauce to use later for the dressing.

  2. Add chicken breasts to crock pot. Season with a little salt and pepper.

  3. Pour the rest of the Frank's hot sauce in to the crock pot. Cover and cook on low for 3-4 hours.

  4. Right before the chicken is finished make the celery slaw. Combine the ranch dressing with the 2 tablespoons of hot sauce, celery and onions. Set aside.

  5. Once cooked, transfer chicken to a medium bowl and shred with a fork.

  6. Set aside 1/2 cup of liquid from bottom of crock pot and pour over the shredded chicken in the bowl and stir.

  7. Serve the chicken on the rolls and top with celery slaw and serve!

Tator Tot Enchilada Casserole

Tator Tot Enchilada CasseroleKids and tator tots seem to go hand in hand. And listen, I get it. Tator tots somehow combine the perfect amount of fluffy potatoes with a crispy outside that is irresistible. But if you are sick of just throwing some on the side with ketchup then you will love this tator tot enchilada casserole recipe!

This is a slightly more adult acceptable dinner dish that still uses your kid’s favorite potato so hopefully everyone will be happy! It’s super easy to make with just a little prep time and then 20 minutes in the oven.

You can even get creative and throw some peppers in the ground beef mixture to change it up! And sneak in some of those pesky vegetables your kids won’t eat!

Tator Tot Enchilada Casserole

Total Time 30 minutes

Ingredients

  • 1 lb ground beef
  • 2 cups chopped onion I go with frozen to save time and tears
  • 2 TBSP minced garlic
  • 2 tsp taco seasoning from packet
  • 2 cups tater tots
  • 1 can enchilada sauce
  • 1 cup Mexican blend cheese
  • Scallions
  • salt and pepper

Instructions

  1. Preheat oven to 350 degrees.

  2. Add beef to skillet and cook over medium heat until halfway browned. Add onions and garlic and continue cooking until beef is completely browned. Add taco seasoning and cook for another two minutes. Remove from heat and drain the grease. Pour the enchilada sauce into the beef and continue cooking for 2-3 minutes.

  3. Transfer the mixture from the skillet in to a 9X13 baking dish. Scatter the tater tots on top. Sprinkle the cheese on top. Bake uncovered for 15-20 minutes or until tater tots are golden brown. Top with scallions. Enjoy!

Crock Pot Mississippi Roast Recipe

Easy Crock Pot Mississippi Roast RecipeMy co-worker shared this roast recipe with me and I almost laughed as I saw the directions for this meal. How can there be no prep, no mixing, nothing? Just place the roast in the crock pot and then add the other ingredients? It sounded too good to be true.

But for once, it WAS true! It was sooo good! And obviously I’m sold on how easy this recipe is as well. No culinary skill required, which is always a plus. Serve this over some mashed potatoes and you’ve got yourself a hearty meal!

The recipe calls for it to cook on low for 8 hours, but I’ve cooked it on high for four hours and shifted it down to low for a half hour and mine turned out great. So if you forget to throw it until you’ve past the 8-hour mark, don’t worry! Just check to make sure the roast is cooked thoroughly.

Crock Pot Mississippi Roast

Total Time 6 hours

Ingredients

  • 3 lb chuck roast
  • 1 packet dry ranch seasoning mix like Hidden Valley
  • 1 packet dry au jus gravy mix
  • 6 TBSP butter
  • 1/4 cup water
  • 5 pepperoncini

Instructions

  1. Add 1/4 cup of water into the slow cooker. Place chuck roast on top of water.

  2. Sprinkle the dry ranch seasoning mix on top of the roast then sprinkle the dry au jus mix on top. Then place the stick of 6 TSP of butter on top of the roast. And finally add the pepperoncini around the roast.

  3. Cook on low for 8 hours. Shred and serve with gravy.

    (can also serve with mashed potatoes. And I mean the instant kind. Nobody got time to peel potatoes.)

Baked Buffalo Chicken Wing Recipe

Easy Baked Buffalo Chicken Wing Recipe This baked buffalo chicken wing recipe is so perfect for the wing fan in your family. And if you are planning a big party this recipe can easily be changed to feed a large crowd. If you don’t like super hot wings then just change up the sauce a bit to fit your tastes a little better. This one might make you sweat!

There’s a little bit of prep with this one but you can do two things at once so it doesn’t feel that cumbersome and the whole meal is ready in under 30 minutes. They get cooked under the broiler so they get nice and crispy, but be careful not to burn them.

Might want to have your ranch and milk on standby though because this wing recipe packs a punch!

Baked Buffalo Chicken Wings

Total Time 30 minutes

Ingredients

  • 1 lb chicken wings
  • 1 tsp cayenne pepper
  • 1 tsp crushed red pepper flakes
  • 1 tbsp crushed red pepper flakes
  • 1 TBSP salt
  • 1/2 cup Franks Red Hot Sauce
  • 1 TBSP butter
  • cooking spray

Instructions

  1. Add chicken to stock pot. Fill with water. Add salt. Turn to high heat. Once boiling, let it boil for 15 minutes. Drain.

  2. Place chicken on in baking dish and spray with cooking spray. Sprinkle cayenne pepper and red pepper flakes on chicken.

  3. BROIL the chicken 7 minutes on each side. Be careful not to burn chicken.

  4. Meanwhile, take a sauce pan and add butter and hot sauce and warm over low heat.

  5. Once the chicken is done add them to the sauce and coat. Then serve!
