Mac ‘n cheese! Mac ‘n cheese!
I’m sure you’ve heard this chant from your kids before. And don’t get mre wrong, we’ve had our share of the blue box mac ‘n cheese made with the powder.
And because my kids love pasta almost as much as I do, I wanted to find an alternative I could cook that was fast and easy. This easy pasta recipe is hands down their most requested dish. And I get it. Cheese. Bacon. What more could you want? All you have to do for this recipe is cook the pasta and bacon and then throw all the ingredients together, toss it in the oven for 25 minutes and you are done!
One way I make this recipe fast is by microwaving my bacon. I can get it just as crispy as I could in the skillet and my stove isn’t covered in bacon grease. An optional ingredient for this dish is leftover rotisserie chicken. If you’ve some on hand it’s nice to throw in, but not necessary.
Cheesy Bacon Pasta Bake
- 6 strips bacon
- 2 10 (oz) cans cream of chicken soup
- 2 cups shredded Monterrey jack cheese
- 1 box (16 oz) spiral pasta
- 2 tsp garlic powder
- salt and pepper to taste
- OPTIONAL: Leftover chopped rotisserie chicken
Preheat oven to 400 degrees. Spray 9x13 baking dish with non-stick cooking spray.
Get a large pot of water boiling. In the meantime, cook bacon and crumble it (I microwave mine to keep the mess to a minimum and for faster prep time).
Cook ziti in boiling water. Drain and return to pot. Stir in two cans of chicken soup, `1 cup cheese, garlic powder, salt and pepper. (add rotisserie chicken here if you have it)
Pour mixture into 9x13 dish. Add remaining cup of cheese to top as well as the bacon. Bake in oven for about 20 minutes.
