Shrimp Tacos with Pineapple Salsa

It's sizzling outside right now and when I come home from work I just don't feel like cooking anything too heavy. We grill out a lot, but that gets old after a while. So I was on the hunt for something light, fresh and easy. That's when I stumbled upon this amazing shrimp taco recipe

If you are looking for a light summer meal, this is it! It's really easy and is done in under 30 minutes. The pineapple salsa is the star of this meal for sure and my husband wanted to keep the extra salsa to use for his chips!

Servings 6 tacos

Ingredients

  • 1 lb shrimp I used frozen, easy to dethaw, but don't forget to cut the tails off
  • juice from one lime
  • 1/4 tsp salt
  • 1/4 tsp chili powder

Salsa ingredients

  • 1 cup chopped pineapple (I used canned version and drained it)
  • 1 small tomato (diced)
  • 1/2 cup finely chopped red onion
  • 1-2 tbsp green chiles
  • 1 tbsp apple cider vinegar

Instructions

  1. Make salsa by combining all salsa ingredients.

  2. Cut tails of shrimp and toss with lime juice, salt and chili powder. Grease a large skillet with with a nonstick cooking spray and heat over medium-high heat.

  3. Transfer shrimp to skillet and cook for about 1-2 minutes on each side and until pink. Do not overcook.

  4. Combine shrimp and salsa on tortillas and top with any other ingredients you like.
